can you get fresh artichokes in Korea? aparently not..so sunchoke veloute becomes- smoked onion and hazelnut veloute. I have been invited to cook a series of  showcase dinners at the Lotte hotel in Seoul , Korea for two weeks at the end of this month(on the recommendation of Pierre Gagnaire-who is opening a restaurant in the hotel this year)its my first time in korea- its going to be great!

I hope the cooking session went well. I’ve been here for two years and I’ve never seen fresh artichokes. If you found them, I’d love it if you could let me know where you got them.
