spices

oh how I love spices……I say this as right now I am shipping quite a bit of them to korea.Thankfully my good friends at www.le-sanctuaire.com have packed them beautifully- sarawak peppercorns? malic acid? eucalyptus leaves?heres one dish-   spicepine-roasted-squab.jpg

    Hi James,
    Malic acid is the natural acid in apples-we use it much the same way as citric acid to set the natural flavour and colour, works very well with green apple sorbet/gelee.
